Tophat smoking BBQ|Swine-apple

Today we smoke a swine-apple!


1 whole pineapple, take top off and core. Any kind of pork on the inside of the pineapple. 2 pounds of bacon for weave. Pork rub and barbecue sauce.

After stuffing pineapple with pork remove outside rind of the pineapple. Put cap of pineapple back on and secure with wooden skewers or toothpicks. Make bacon weave on parchment paper. Place pineapple onto weave then roll parchment paper around the pineapple and secure bacon with toothpicks. Sprinkle rub onto bacon. Smoke for 3-4 hours our until the internal temp is 165 degrees. At 150 degrees baste bacon with favorite BBQ sauce. When Swine-apple is done let rest for 5-10 minutes. Remove toothpicks and wooden skewers. Slice pineapple and enjoy!
